Unit definition

One unit of activity is defined as the amount of enzyme that released 1 μmol of p-nitrophenol per min at pH 6.0 and 60°C using p-nitrophenyl α-D-mannopyranoside as a substrate.

Application

α-Mannosidase can be used to liberate mannose from a variety of synthetic and natural α-mannosides and cleaves off α-1,2-, α-1,3-, α-1,4-, and α-1,6-linked mannose residues.
